Healthy Back to School Recipes – Refresh!

Three Basic Back to School Recipes

In 2016 we wrote a blog with some quick, easy and of course, healthy Back to School recipes to help provide some tasty options for you busy parents. Now it’s time for a refresh! Here are some more recipes to help you create delicious dishes with minimal effort and ingredients, for all types of eaters. We’ve also chosen recipes that can be created by visiting your local farmer’s markets, and ones that will work well with a variety of your favorite Pairings olive oils and vinegars!

 

Pasta with Fresh Tomato Sauce

If your child is a vegetarian, this Pasta with Fresh Tomato Sauce from Martha Stewart is a perfect Back to School lunch or dinner option! Prep time is under 30 minutes and you’ll find it’s just as tasty as leftovers as it is freshly cooked:

Ingredients:

  • 2/14 pounds ripe tomatoes
  • ¼ cup fresh basil leaves
  • 1 tbsp parsley
  • 1 tbsp chopped garlic (from 2 garlic cloves)
  • ¼ cup Pairings Basil Olive Oil (For an extra herb boost, try our Whole Herb Rosemary Olive Oil)
  • 1 lb spaghetti or spaghettini noodles
  • Salt and pepper to taste
  • Grated Parmesan cheese (option for serving)

Directions:

  1. Finely chop the tomatoes, basil, parsley and garlic and mix together with your favorite olive oil. You can also pulse ingredients together (including oil) in a food processor to blend.
  2. Bring a large pot of water to boil and add pasta; cook until al dente. Drain pasta and toss it in a serving bowl with the sauce. When serving you can drizzle with additional olive oil and serve with cheese.

 

No-Mayo Tuna Salad Sandwich

We were inspired by Tori Avey’s Healthy Mediterranean Tuna Salad recipe, and created our own version for some tasty tuna salad sandwiches! If your kid is gluten-free, then try pairing this recipe with gluten-free bread or crackers, or fresh some veggies to dip. Not only is this Back to School recipe healthy, it takes less than 10 minutes to prep!

 

Ingredients:

Directions:

  1. Drain and pour tuna in a bowl. Use a fork to break up any large chunks.
  2. Add celery, basil, scallions and lemon juice to bowl. Use the fork to stir well.
  3. Add olive oil to moisten to your liking. Season with your preferred amounts of salt and pepper before serving.

 

Powerhouse Quinoa Salad

Here’s another great gluten-free and vegetarian option! Of course for those meat-lovers, feel free to add your favorite meat to modify this dish to your kid’s liking. We loved this Powerhouse Quinoa Salad recipe from One Lovely Life because it’s perfect for you meal-prepping parents: it stores well and can be easily taken in a school lunch or served up for dinner. Best of all, you can substitute in your favorite veggies and flavors to create your own Powerhouse Quinoa Salad to help fuel your family as they head Back to School.

 

Salad Ingredients:

  • 3 cups cooked, cooled quinoa (for extra color try using red quinoa or tri-colored quinoa)
  • 1-2 apples, cored and diced
  • 2-3 stalks celery, diced
  • 1-2 cups loosely packed spinach leaves, torn
  • ½ cup dried cranberries or dried cherries
  • ½ cup toasted walnuts or pecans
  • Salt and pepper to taste

Dressing Ingredients:

Directions:

  1. Prepare the quinoa: rinse quinoa, then add rinsed quinoa and 3 cups of water to a large saucepan. Bring to a boil over medium heat for 5 minutes. Turn off heat and let steam for 15 minutes or until water is absorbed. Let cool.
  2. In a large bowl toss quinoa, apples, celery, honey, vinegar, olive oil, salt and pepper. Pour over quinoa salad mixture and toss to coat.
  3. Toss salad with dressing and serve.
